About the week

In this immersive hands-on class, you'll work with some of the best local produce and ingredients, learning how to create exquisite dishes that embody the field-to-fork philosophy. Start by learning how to cook with East Lothian's renowned pork, known for its tenderness and flavor. Next, dive into the art of preparing succulent venison, sourced from the lush farmlands surrounding the area.

You'll also work with a selection of locally grown vegetables, including celeriac, red cabbage, and suede, each bringing a unique taste and texture to your culinary creations. Our instructors will share tips and techniques for handling these ingredients, from preparation to cooking methods.

As a special treat, you'll create a dessert using foraged elderflower to make a creamy panna cotta. This delightful and fragrant dessert captures the essence of East Lothian's wild countryside, adding a unique touch to the experience.

Throughout the class, you'll discover why East Lothian is famous for its amazing local produce and learn how to transform these fresh ingredients into delicious, memorable dishes. Whether you're an experienced cook or just beginning your culinary journey, join us for a class that combines the best of local flavors, hands-on learning, and a true field-to-fork experience.
