This immersive cooking class explores the bold cuisine made famous by chef Yotam Ottolenghi, known for his inventive use of Middle Eastern spices, fresh ingredients, and a variety of textures. Learn to prepare a range of dishes that bring these flavors to life, creating a feast that's as visually appealing as it is delicious.

Here's what you'll explore during the class:

  • Pitta Breads and Pea Fritters: Begin with the basics by making homemade pitta breads from scratch, learning the secrets to achieving the perfect softness and texture. Next, create delicious pea fritters—crispy on the outside, tender on the inside—that make an ideal starter or snack.
  • Tomato and Feta Platter: Dive into a refreshing tomato and feta platter, where you'll learn to balance flavors and textures. This dish features ripe tomatoes, creamy feta cheese, and fresh herbs, showcasing the simplicity and vibrancy of Ottolenghi-style cooking.
  • Aubergine Paneer Dal Curry: Discover how to make a rich aubergine paneer dal curry, blending Indian and Middle Eastern influences. This dish combines creamy paneer cheese with hearty lentils and roasted aubergine, creating a flavorful and satisfying curry.
  • Spatchcock Chicken and Whole Roasted Cauliflower: Explore more substantial dishes as you prepare spatchcock chicken and whole roasted cauliflower.   • Location and Facilities: Yarrow Cookery School is located in a stunning 400-year-old steading, just a short walk from Longniddry train station. The school offers a free car park and EV chargers on-site, making it convenient for all participants.
