Hello everyone!

 

As we finally enjoy the warmth of July, we are excited to bring you a fresh newsletter packed with delicious inspiration and updates from The Yarrow Cookery School. Our passion for food and community is at the heart of everything we do. Richard and Sophia Yarrow founded the school to share their love of cooking and bring people together through memorable culinary experiences. We believe in using local, sustainable ingredients to create dishes that not only taste amazing but also connect us to the land and each other.



What's your favourite dish?

 

In this month's feature, Richard Yarrow shares his favorite dish to cook for friends: Middle Eastern spatchcock chicken with a yogurt, feta, and roasted tomato salad, served with homemade pita breads.

 

Why this dish? Richard loves this meal because it embodies simplicity and flavor, showcasing the best of summer produce. Spatchcocking chicken is a great technique as the cooking time is quicker, which keeps the chicken moist. Another reason I love this combination is that it offers something for everyone at the table. You can easily add more salads or sides and create different dishes every time, ensuring each meal feels fresh and exciting

 

Richard’s Tips: Keep an eye on the tomatoes as when overcooked they lose their shape. It's also best to use ripe tomatoes and fresh herbs from your garden or local market.

Nicola beautifully captured the joy and connection we strive to create in our classes. We even had a fun family photo session that we will cherish forever!
