Easy Chicken Quesadillas – A Yarrow easy family recipe for Autumn Evenings

At Yarrow Cookery School, we love recipes that are quick to make, full of flavour, and perfect for sharing. These Chicken Quesadillas tick all the boxes and are such an easy family recipe everyone can enjoy at home.


They’re cheesy, comforting, and easy enough to whip up on a busy midweek evening — but they also have enough spice and zing to feel like a treat. Quesadillas are brilliant for family cooking, too: let the kids sprinkle cheese, fold the tortillas, or help serve them up with guacamole and salsa.

It’s the kind of simple, joyful recipe we often share in our kids’ cookery classes and beginners’ courses, because once you’ve learned it, you’ll come back to it again and again.


Chicken Quesadillas, an easy family recipe (double for 2+ kids)

Ingredients – Chicken Filling

  • 150g cooked chicken breast or thigh, shredded

  • 1 tbsp olive or vegetable oil

  • ½ small onion, finely chopped

  • 1 garlic clove, minced

  • ½ tsp smoked paprika

  • ½ tsp ground cumin

  • ½ tsp dried oregano

  • Pinch of chilli flakes

  • Salt & pepper to taste

  • Juice of ½ lime

Cheese

  • 50g mozzarella (for stretch)

  • 50g Cheddar or Red Leicester (for flavour)

Optional Heat

  • Sliced jalapeños (fresh or pickled)

Other

  • 6 small corn/plain flour tortillas (approx. 15cm)

  • Oil or butter for cooking

Method

1. Prepare the Chicken Filling

  • Heat oil in a frying pan over medium heat.

  • Sauté onion until soft (2–3 minutes), then add garlic.

  • Stir in paprika, cumin, oregano, and chilli flakes. Cook briefly until fragrant.

  • Add shredded chicken, season, and squeeze over lime juice. Stir to coat and set aside.

2. Assemble the Quesadillas

  • Place a tortilla on a board.

  • Sprinkle cheese over half, top with chicken, and add jalapeños if using.

  • Fold tortilla over. Repeat with remaining tortillas.

3. Cook the Quesadillas

  • Heat a pan or griddle over medium heat with a little oil or butter.

  • Cook each quesadilla for 2–3 minutes per side until golden and crispy, and the cheese is melted.

4. Serve

  • Slice into wedges, garnish with coriander, and serve with salsa, lime wedges, and guacamole.
