The Best Tzatziki Recipe

Updated: Oct 19

Tzatziki is one of those recipes that proves the simplest dishes are often the best. Creamy Greek yogurt, fresh cucumber, mint, and garlic come together to make a refreshing dip that pairs perfectly with grilled meats, vegetables, or warm pitta breads. It’s a recipe we love teaching at the Yarrow Cookery School in Scotland, where guests join us for hands-on cookery classes near Edinburgh and discover how easy and delicious authentic dishes can be.

Ingredients

  • ½ cucumber

  • 200g Greek yogurt

  • Small bunch of fresh mint, finely chopped

  • 1 garlic clove, crushed

  • 2 tsp white wine vinegar

  • 2 tsp olive oil

  • Salt, to taste

Method

  1. Prepare the cucumber: Grate the cucumber, sprinkle with salt, and leave for 10 minutes to draw out excess water.

  2. Drain well: Wrap the grated cucumber in a clean tea towel and squeeze until most of the liquid is removed.

  3. Mix: Combine the cucumber with Greek yogurt, garlic, mint, vinegar, and olive oil in a bowl.

  4. Taste & season: Stir well, adjust the seasoning, and chill until ready to serve.

Serving Suggestions

Tzatziki makes a wonderful side for barbecues, mezze platters, or as a simple dip with pitta bread and vegetables. In our cookery experiences in Scotland, we often pair it with chicken souvlaki, grilled lamb, or seasonal East Lothian vegetables fresh from local growers.
