One of our absolute favourites, this hands on class celebrates venison in a generous, seasonal and showstopping way.
You’ll learn how to prepare and cook a beautiful Venison Wellington, using red deer loin, which is ideal for this dish. We’ll show you how to build the Wellington properly, layering tender venison with rich mushroom duxelles, pâté and prosciutto before wrapping it in crisp golden puff pastry.
It is the kind of dish that feels really special, perfect for entertaining, Sunday lunches or a celebratory meal, but still completely achievable once you understand the method.
You’ll also prepare seasonal sides to serve alongside the Wellington, before sitting down together to enjoy everything as a relaxed lunch.
